Since B.A.D. in Williamsburg, NY is open 24/7, it’s never too late to be a little bad. Friday night, though, as we rolled in around midnight and I considered how good I’d been all week, I thought ‘salad’. The vegan Greenpointer salad with roasted beets, candied walnuts, sliced apples over spinach with a side of shallot vinaigrette made it good to be good…plus it made me feel a little less guilty plowing into a plate of sweet potato fries.
Not in NY? Mix this salad up with everyday ingredients and some help from the The Frugal Chef or Exploits of a Vegan Wannabe for the candied walnuts (don’t forget to grab some veg*n sugar); the NY Times for the roasted beets; and Epicurious for the shallot vinaigrette or try Annie’s Red Wine & Olive Oil Vinaigrette for a little variation.
