New Twist on an Old School Favorite: Grilled PB&J

Since Borders Bookstores declared bankruptcy, many locations are closing. Take advantage of it. I went perusing one of the closing Manhattan, NY stores and found The 30 Minute Vegan by Mark Reinfeld and Jennifer Murray. While the whole book looks good, I pretty much bought the book for two recipes in particular. One of those being the Grilled Peanut Butter and Jelly sandwich, even though I didn’t even need the book to know how to make this.

For mine, I used:

I enjoyed my Vegan Grilled "PB&J" Sandwich with a glass of Coconut Milk.
  • a packet of Justin’s Almond Butter with Maple (Maple instead of Honey means vegan!)
  • Whole Foods’ Mixed Berry Spread (No sugar so no worries of bone char filters!)
  • Whole Foods Organic Whole Wheat Bread (Non-dairy and labeled with their vegan V!)
  • Earth Balance Soy free, non dairy, Buttery Spread (Yes, vegan as well)

    ‘Like how detailed you get about keeping it all vegan. Don’t think we woulda thought of the bees issue when it came to the honey. No sweat, honey – we are all about the maple syrup.

    1. Since I’m only vegetarian, I’m not really concerned about honey, but I’m trying to be a sensitive to others concerns as possible. Added bonus: this was the best nut butter I’ve had so far…way better than the almond butter with honey. I’m actually loving it more than peanut butter, and I don’t even like almond butter or even almonds all that much. This morning, I decided to forego the jam or spread and added fresh pear slices! Yummy! The pear I used was really ripe and soft. I’m kind of glad I was out of bread and nut butter packets cause I could have eaten more. I’m going to try with softened apple slices and bananas (separately…or together; who knows) in the future.
