Since Borders Bookstores declared bankruptcy, many locations are closing. Take advantage of it. I went perusing one of the closing Manhattan, NY stores and found The 30 Minute Vegan by Mark Reinfeld and Jennifer Murray. While the whole book looks good, I pretty much bought the book for two recipes in particular. One of those being the Grilled Peanut Butter and Jelly sandwich, even though I didn’t even need the book to know how to make this.
For mine, I used:
- a packet of Justin’s Almond Butter with Maple (Maple instead of Honey means vegan!)
- Whole Foods’ Mixed Berry Spread (No sugar so no worries of bone char filters!)
- Whole Foods Organic Whole Wheat Bread (Non-dairy and labeled with their vegan V!)
- Earth Balance Soy free, non dairy, Buttery Spread (Yes, vegan as well)
